Making Vitamix Flat Bread

  1. Put dry ingredients in the blender and pulse
  2. Add .5 cup water and oil to the mix and pulse 5 or 6 times.
  3. If dry, turn to speed 1 and add the extra water, being careful not to add too much. The dough should pull away from the jar and blade.
  4. Empty onto a floured work surface and kneed 2 to 3 times. Cut in half, flatten dough, and fold the edges into itself and shape a ball.
  5. Let rest for 20 minutes then roll to shape, generously using extra flour.
  6. Heat a heavy skillet to medium for at least 5 minutes. Place the shell in the pan and cook for at least 3 minutes. After 1 minute, check the bottom for browning, careful not to let it burn.
  7. Add a big dollop of cashew cream and spread evenly. Add any other toppings you'd like.
  8. Remove after 4 another 2 minutes. Enjoy!
