GRAIN's Morning Glory Muffins
Our friends at GRAIN have created our new favourite grab and go muffin. Full of vitamins and nutrients with just enough sweetness to still classify as breakfast fare. Made even better with GRAIN's organic freshly milled Red Fife flour.

Instructions
  1. Preheat oven to 425°F.
  2. In a large bowl, whisk together flours, baking soda, cinnamon, salt and pecans.
  3. In a separate bowl, whisk the eggs, brown sugar, honey, oil, applesauce, orange zest, orange juice and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients, stir a few times and then add the raisins, carrots, and apple.
  5. Gently fold together with a spatula until just barely combined.
  6. Divide the batter into the prepared muffin pan.
  7. Bake for 5 minutes at 425°F, then reduce the temperature to 350°F and bake for an additional 18 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 10 minutes and then transfer to a wire rack.

  1. Recipe looks great! Ingredients list doesn’t have orange juice, just zest but recipe instructions talks about adding orange juice. Should this be the juice of 1 orange used for the zest?
