Vietnamese at Home

In our Vietnamese Cooking Class you’ll learn that vibrant Vietnamese cooking is created by using fresh ingredients, minimal use of dairy and oil, complementary textures, and plenty of vegetables. Fresh herbs, such as ginger, lemongrass, coriander, and Thai basil are combined with spices and meats to create satisfying, healthy food.  In our Vietnamese Cooking Class, the recipes have been borrowed/adapted from the Slanted Door cookbook….as well as, approved by a Vietnamese Grandmother. We have also included modern vegetarian options, which are equally delicious. This is basically the Vietnamese version of a North American soup and sandwich combo. Join us to learn how to cook fantastic Vietnamese food, at home in our Vietnamese Cooking Class!

  • Miso Pho with Ginger and Mushroom
  • Summer Rolls with Peanut Sauce

Recreating Tuscany, Italy

In this Italian Cooking Class, Chef Cosmo will recreate an evening in Tuscany. We will enjoy some tasty appetizers, while preparing the crisp salad, simple fresh pasta, luscious chicken and decadent dessert! You will leave full, satiated, and ready to re-create this fantastic meal for your friends and family.

I just returned from Tuscany, Italy where I did a cooking class at a winery. I left inspired by the flow, ease and simplicity of the way the woman led the class. Her passion for the food, wine, and land that it was grown on. Her passion for life, in general. She talked about all the ways people suggested she use her land to make more money and why she chose to live with less money and more ease in her life. This woman inspired me. I remembered my passion for food in this simple life affirming way. It is from this place that I offer this class in a sort of ode to her and her way of life. Thank-you Anna Lisa!

Antipasto:

  • Italian Sausage and Stracchino Cheese Baked on Focaccia
  • Sun-dried Tomatoes, Olives and Capers
  • Marsala Chicken Liver and Heart Pate

Insalata:

  • Fennel Bulb, Pear and Celery Salad

  • Fresh Hand Cut Pasta with Braised Greens and Garlic
