Seasonal Superfoods and Wild Game

The Autumn and Winter season is one of my favourites; but, it is easy to go overboard on amazing foods. One can easily spoil all the hard work and exercise performed during the summer months. In this class, we will learn how to cook some tasty, nutritious and soul satisfying recipes. We focus on preparations of some great Fall/Winter veggies as well as cooking wild game. For those interested, we will also talk about cost effective substitutions for the game meat. These dishes are a fantastic alternative to classic holiday dinners, but are also great everyday meals.

We will cook and eat the following menu together, so come hungry!

  • Chai Spiced Mulled Apple Cider
  • Wild Boar Bacon with Sage Butter Butternut Squash and Cashew Cream
  • Venison Tenderloin, Chard Wrapped Quinoa and Walnut Parcels and Beet Ginger Coconut Puree
  • Coconut Chia Pudding with Vanilla Roast Apples

Spanish Tapas and Paella

Fantastic music, amazing dance, entertaining festivals and incredible food… Spain is all about flair.  One of my favourite dishes to cook and a dish that makes for an impressive main dinner course is paella.  But before we get to the main event we will work on delicious classic Spanish tapas to warm your taste buds and hone your entertaining skills.

Come hungry as we will make and eat the following amazing menu:

  • Patatas Bravas con Romesco Sauce (Roast potatoes with Aoili)
  • Gambas al ajillo (Garlic white wine shrimp)
  • Croquetas de Jamon Serrano y Manchego (Ham and cheese croquettes)
  • Paella de Valencia (Chicken, Mussel, Chorizo paella)

Fresh and Healthy Chinese

It has been around since you were a kid…Chinese is the most popular ethnic cuisine in Canada however you will find more poor options than good ones.  In this class we learn Michael’s renditions of classic North American Chinese.  Loaded with wonderful flavours and built with high quality ingredients, these easy to replicate dishes will find their way onto your dinner table often.  Michael will also show you how to take them to the next level if you want to invite some guests.

  • Baked Sweet Chilli Egg Rolls
  • Chow Mein
  • Lemon Chicken
  • Crispy Beef in Ginger Chilli Sauce
  • Chinese BBQ Pork (char sui)

Chopped Victoria

In this deliciously fun class format you will go head to head against others in your group and create delicious appies using mystery ingredients. The best appetizer will be safe, but the other will be chopped. Do you have what it takes to go up against your peers, friends or family? The bonus…you have one of Victoria’s top chefs to take pointers and advice from to help your appetizer make the cut. Delicious mystery ingredients may include…

  • Prawns, Mussels, Albacore Tuna
  • Chorizo Sausage, Duck Breast, Chicken Wings
  • Fresh Goat Cheese, Buffalo Mozzarella
  • Fennel, Zucchini, Cauliflower

After a few rounds of delicious chopped fun, Chef Michael will finish the night off with a couple dishes of his own.

Mole Pulled Beef Brisket or Roasted Garlic Mushrooms with Savoury Chickpea Pancakes (V) served with Purple Polenta Fries plus Roast Carrot and Celery

Coconut Chia Pudding with Shaved Chocolate and Strawberries

The Fine Print:

The standard price for any private party is $1250 (+tax) for the first 10 people and $95 (+tax) per person after that. The minimum charge for a private event is $1250 (+tax). The 3-hour event, which typically runs from 6-9pm, includes the chef, food costs, and staff. Any beverages would need to be supplied by you, for a self-service bar. If you prefer bar service (we serve you), we would need to take out a special occasion license, at an additional cost to you. Groups larger than 20 guests, will require additional rentals. Private Party Cancellation Policy:

  • A 50% deposit is required at time of booking, and is fully refundable up to 30 days before your event. The balance is due 48 hours prior to your event.
  • Half of the deposit is refundable, up to 14 days before your event. The deposit is non-refundable less than 14 days prior to your event.
  • If you need to change the date of your event you may do so once, for free, up to 14 days before your event. Any additional date changes will have a $100 charge. We are sorry, but we cannot accommodate date changes less than 14 days prior to your event.
  • Final number of guests is required 48 hours before your event (with no changes allowed following this time - if a guest is unable to attend within this period, please send somebody in their place)
