Introducing Chef Aaron Lobo

We posed these five questions to Chef Aaron Lobo:

When did you know you wanted to be a chef?

I can’t recall the exact moment. I fell into cooking by accident and never felt out of place.

I look back and see that cooking has always been a large driving force throughout my life, ever since I was 6 years old and I baked my first Betty Crocker cake. It was vanilla cake with a pistachio pudding filling.

You are stranded on a deserted island, what five foods would you want with you?

  • Jamon Iberico
  • 15 yr. aged white cheddar
  • Pickled vegetables
  • Koslicks Dijon by Anton
  • a case of Gamay, Morgon to be specific (I’m counting wine as a food group)
If I were stranded all I’d want to do is sit back and enjoy wine and a charcuterie board.

What is your best food memory?

It was Christmas morning. My mother and father are both excellent cooks and I was fortunate enough to have amazing, home-cooked meals all year round. Christmas morning, my mother and father would heat up a bunch of finger foods and hors d’oeuvres so they would spend more time around the table.
My fondest food memories weren’t just the food, but the people I shared the experience with.

What’s your secret ingredient for delicious cooking?

Lemons and Love; balancing out any flavors with a touch of soft acid will brighten up any sauce, veg, preserve etc.
Taking the time to taste and season, accordingly, with salt and lemon juice is putting the love into what you’re cooking and makes anything delicious.

Funniest kitchen incident?

This one time we were deep cleaning our line fridges and pulled all of the food and shelves out. I hid inside the lowboy fridge for 10 minutes, waiting for my chef to come and inspect my section. When he leaned over to check inside the fridge, I jumped out at him and he got so scared he jumped up, but his shirt got caught on the handle of the door and ripped off. Just as he was standing there, our sommelier was giving a tour of the kitchen to a group of ladies at a bachelorette party. They stared at him for a minute, until one whistled and they all started laughing.
