Chef Kaelhub Cudmore is a local from some of the wilder parts of Vancouver Island. Born with a deep connection and respect for our local habitat he cooks with an un-embellished, but whimsical technique seeking to present food in it’s most natural and nourishing state. He believes that food connects, creates lasting memories — and should leave our hearts and bellies full. Our best food comes from local farms, the oceans, the forests and the people that make up the environment around us. Chef Kaelhub wants build our local abundance into our food memories for decades to come.
His resume begins with a simple high school dishwasher’s upbringing and sees him through numerous coveted boutique resorts, extensive Relais & Chateaux experience, multiple guest chef appearances abroad and as Chef de Cuisine for Seabourn cruises overseeing for America’s most decorated Chef, Thomas Keller. He is currently at the Fairmont Empress as Banquet Chef and if you’ve been to one of the many functions at the famed property over the last two years, he was leading the brigade for you.
