Chef Bilkiz (Billie) Essa was born and raised in Nairobi Kenya, East Africa. Her interest in cooking began at an early age and was influenced by her Gujarati heritage and the diverse cultures and foods found in East Africa. Her passion for cooking, and her husband’s love for food inspired the establishment of The Spice Jammer Restaurant, where Billie has been the only chef for the last 25 years. Her culinary skills have earned the restaurant Zagat rating, numerous Trip Advisor Awards and a mention in North West Best Places.
In her spare time Billie runs culinary workshops that are both informative and fun. She is excited to be teaching at Cook Culture as it will give her an opportunity to share her East African – East Indian cooking style and stories with more people.
Although Billie’s educational background is in accounting, over the years, her culinary journey has taken her from “cooking the numbers” to “cooking the food”.
