Join Rebecca and Jenn as they bring a menu to life, providing handy kitchen tips and cooking methods that are useful for every day cooking with a gourmet flavour. Challenge yourself to dabble in new cuisines, ways of eating and thinking about food. This Easy and fun, Vibrant Vegetarian Meals cooking class series has been inspired by gorgeous cookbooks. Rebecca and Jenn take their collective years of experience in the kitchen, creating recipes that are great for weekdays and entertaining alike. You will definitely leave this class having learned something, having had a great time and with a full belly! 

Rebecca is a food photographer, stylist, recipe developer and cookbook author of First, We Brunch. Jenn is a freelance food writer, recipe developer and food stylist, and past Food Editor for Chatelaine and Canadian Living magazines. Together, they make a dynamic team, adding their own spin to the recipes while layering in handy food styling tips and tricks too!

Our hands on cooking classes are set in a large communal teaching kitchen, which is similar to a home kitchen, just bigger! You will learn shoulder to shoulder from the instructor along with the other guests. After you learn to make the meal, everyone will sit together and enjoy the meal family style. In all of our classes, other than Knife Skills, you are welcome to bring your own beverages.

At Our Victoria Cooking School

Rebecca and Jenn have loosely based the menu on Anna Jones, The Modern Cook’s Year – a fantastic collection of vibrant and decadent vegetarian recipes. Whether you’re into eating more meatless meals, or simply looking to up your plant-based cooking game, this is a great introduction.

Note: the cookbook is available for purchase online, in-store before, or, at the class.

While we recommend you get your hands on a copy of the cookbook, it is not a prerequisite for participation.

  • Butter Bean, Roasted Lemon and Caramelized Onion Hummus
  • Homemade Yogurt Flatbread
  • Gentle Potato Chowder with Toasted Chilli Oil
  • Griddled Caesar Salad with Crispy Chickpeas
  • Kale and Mushroom Lasagna (hint: learn how to make your own pasta and ricotta!)
  • Almond and Smoked Salt Blondies

Please note: we can give gluten alternatives, but unfortunately, we will be unable to prepare separate food.

For this cooking class, join Jenn and Rebecca as they delve into Sara Britton´s (of ‘My New Roots’ fame)Naturally Nourished.  They will take you through a sampling of breakfast, lunch, dinner and dessert! Make some pastry, home made aioli, simple pickles and get ready to enjoy some delicious food!

Lunch
