Coconut Cashew Butter

Whether you prefer it smooth or crunchy, this coconut cashew butter makes for a delicious spread!

Ingredients:
2 cups (210 g) roasted, salted cashews
½ cup (5 g) sweetened coconut flakes
2 Tablespoons (30 ml) agave
2 Tablespoons (30 ml) coconut oil
1 teaspoon coconut extract
1 cup (120 g) roasted peanuts

1. Add all ingredients to the Vitamix container in the order listed and secure the lid.
2. Select Variable 1, start the machine, and slowly increase to its highest speed. Blend for 45 seconds, using the tamper to press ingredients toward the blades. Stop and scrape the sides of the container.
3. Select Variable 1, start the machine, and slowly increase to its highest speed. Blend for 45 seconds, or until desired consistency is reached, using the tamper to press ingredients toward the blades
