Brunch at Home with Vitamix

 

From Chia Porridge to Mint Smoothies, spoil your Mom this Mother’s Day, with a delicious home-cooked brunch

Chia Breakfast Porridge

Ingredients: 

  • 1¼ cups (300 ml) almond milk
  • 2 Tablespoons chia seeds
  • 4 dates, pitted
  • ¼ teaspoons ground cinnamon
  • 1 cup fresh seasonal fruit, for garnish

Method:

  1. The night before serving, place milk, chia seeds, dates, and cinnamon into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 45 seconds.
  5. Transfer the mixture to a bowl, cover and refrigerate overnight to thicken.
  6. Serve chilled topped with desired fresh seasonal fruit.

Whole Wheat Waffles

Ingredients: 

  • 1 cup (120 g) whole wheat flour
  • 1 cup (125 g) all-purpose flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups (480 ml) vanilla soy milk
  • 2 large eggs, lightly beaten
  • 2 Tablespoons honey, or sugar
  • 4 ounces (110 g) soft tofu

Method: 

  1. Combine flours, baking powder, and salt in a batter bowl. Set aside.
  2. Place milk, eggs, sugar, and tofu into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 10, then to High.
  5. Blend for 20 seconds.
  6. Reduce speed to Variable 4 and remove the lid plug.
  7. Add the flour mixture slowly through the lid plug opening and blend an additional 10 seconds until incorporated.
  8. Let batter sit 5-10 minutes before cooking to yield best texture and flavour.

Hint of Mint Smoothie

 Ingredients: 

  • 1 cup (240 ml) water
  • 1½ cups (240 g) green grapes
  • 4½ cups (100 g) loosely packed spinach
  • 2½ cups (385 g) fresh pineapple chunks
  • 1 cup (135 g) ice cubes
  • 6-8 fresh mint leaves
Method:
  1. Add all ingredients to the Vitamix container in the order listed and secure the lid.
  2. Select Variable 1 or the Smoothie program.
  3. Start the machine, slowly increase to its highest speed, and blend for 45 seconds
  4. Serve & garnish with mint leaves
